The Data Steward is responsible for maintaining accurate item, recipe, and costing master data across multiple enterprise systems to support menu development, procurement, operations, finance, and nutrition. This role monitors incoming requests, builds and updates recipes and item records, supports audits, and ensures timely, compliant updates that enable reliable reporting, forecasting, and restaurant execution for assigned brands/concepts.


This position is based in our Tampa area Restaurant Support center and approved for a hybrid schedule once new hire training is completed.



Key Responsibilities

  • Monitor the Menu Item Request (MIR) workflow for new requests; prioritize and action items for assigned concepts/brands and provide coverage as needed.
  • Respond to ad hoc recipe and costing requests from R&D, Beverage, Operations Excellence, and Planning & Forecasting via email and SharePoint updates (BBI cards).
  • Build and maintain recipe records; model product swaps and provide current vs. proposed plate costs to Finance and other stakeholders.
  • Provide Planning & Forecasting with recipe numbers and supporting data to enable accurate usage forecasts.
  • Create and maintain nutrition system records by building new core recipes in ESHA/Genesis when requested.
  • Process Prep Tool and CIM setup requests for new specials/menu items based on Operations and Training request forms.
  • Triage and resolve ServiceNow incidents/tickets assigned to the SCDM team for responsible brands; complete updates, close tickets, or route to the appropriate team as needed (e.g., CIM inventory additions, AvT recipe concerns, BWL additions, Prep Tool forecasting concerns).
  • Set up new items and process pricing extensions/updates in 24TRACC based on Buyer/Procurement Support approvals and EPIF documentation; follow SOPs and request missing information when required.
  • Complete PLU audit actions posted to the Data Management Teams page: add/create recipes for mappable items and flag unmappable items for removal per guidance.
  • Communicate completion and mapping needs to the PLU team (e.g., via Teams) and coordinate follow-up to ensure items are mapped accurately.


Required Skills / Qualifications

  • Strong attention to detail and comfort working with master data, recipes, item attributes, and pricing/costing details.
  • Ability to manage multiple intake channels (workflow queue, email, SharePoint notifications, ServiceNow tickets) and prioritize work by business impact and deadlines.
  • Working knowledge of recipe build, plate cost concepts, and item setup processes; ability to validate inputs and identify missing or conflicting information.
  • Proficiency with spreadsheets and structured documentation; ability to follow SOPs consistently.
  • Clear written communication and stakeholder management skills (e.g., coordinating with Finance, Ops, Buyers, and mapping teams).
  • Problem-solving mindset for triage and incident resolution; ability to route issues appropriately when outside scope.


Success Metrics

  • MIR items reviewed and progressed within agreed timelines; minimal rework due to data quality issues.
  • Accurate, timely recipe builds/updates and plate cost outputs; strong alignment between systems (CrunchTime, CIM, Prep Tool, Genesis).
  • ServiceNow tickets resolved/closed efficiently with proper documentation and correct routing when needed.
  • Timely completion of weekly PLU audits and effective coordination to ensure items are mapped.
  • On-time monthly plate cost sheet updates stored in the correct locations and aligned to SOPs.
